After-school snack board recipe


Inspired by Lauren’s Latest and The Simple Veganista, this snack board contains a wonderful variety of fruit and veg, PLUS homemade crisps, making it the most delicious after-school snack.


A feast for the eyes as well as the taste buds, the kids will love coming home to this incredible platter!



The best part? It’s really simple to put together, and you can easily adapt the ingredients to suit whatever you have in the fridge - and whatever your little ones will eat!



Overview: 

Prep time: 15 minutes

Cook time: 20 minutes

Serves: 4 people


Ingredients: 

4 potatoes

4 tsp oil

Salt

8 tomatoes, sliced

4 carrots, peeled & sliced

1 cucumber, sliced

12 strawberries

2 mandarins, segmented

2 apples, cored & sliced

Baguette

Crackers

Meats (like salami, ham or turkey)

Cheese


Instructions:

  1. Preheat the oven to 200℃ and line a baking tray with baking paper.

  2. Use a mandoline to thinly slice the potatoes then pat them dry with a towel to remove any excess moisture.

  3. Put in a bowl with the oil and some salt. Toss well, then put the potatoes in a single layer on the baking tray.

  4. Put in the oven and bake for 10 minutes.

  5. Remove from the oven, turn each crisp over, then bake for another 7 to 9 minutes. 

  6. In the meantime, prepare your other snack board ingredients by lining a board or platter with baking paper and arranging everything on top.

  7. Once the crisps are ready, let them cool for 2 to 5 minutes before adding to your snack board.


Storage tips 

We recommend eating the prepared fruit, veg and meat straight away, but you can store any leftover crisps to eat later. Just wait until they’re fully cool then put them in an airtight container for 1 to 2 weeks.
