Seasonal fruit at its finest!
This recipe from BBC Good Food combines wonderful fruity flavours with sweetness from the honey to create a seriously delicious cake.

Preparation
Preheat the oven to 180℃.
Get a roasting tin and put the apples, orange rind and orange juice inside, then drizzle them with the honey.
Put the tin in the oven and roast the fruit for 15 minutes. Stir the fruit around, then roast for another 15 minutes.
Take the fruit out of the oven and leave it to cool, but make sure you leave the oven turned on.
Put the sugar and butter in a mixing bowl and beat until light. Add the eggs one at a time, beating in between. Then, sieve in the flour and baking powder. Make sure everything is well combined.
Add in the cooled apples, and mix well.
Butter and flour the roasting tin that you used for the apples. Pour the mix in the tin and bake for 25 to 30 minutes, until the cake has risen and turned golden.
Tips
Vegan: To make this dish vegan, try using vegan-friendly alternatives for honey, butter and eggs.
To store: Once the cake is ready, put it in an airtight container and keep it in a cool, dry place for up to 3 days.
