Serves: 1 person
Preheat the oven to 220 degrees.
Use a fork to poke holes into the sweet potatoes, and cover them individually in foil, and line them on a baking sheet keeping folded foil side up.
Roast for 40 minutes until the skin has puffed up and you can easily pierce them with a fork. Remove the foil and bake again for 10 to crisp the skin.
Once they're baked you can slice them open, and mash the flesh with a fork, adding olive oil or butter, add salt and pepper, shredded cheese, fresh yogurt, olives, coriander and green onions!
You can enjoy them with your favourite toppings, cherry tomatoes, other herbs, protein...Don't be shy be creative!
