Baked Sweet Potato - With a Fresh and Herby Twist

Who doesn't love a puffy, baked sweet potatoe says @lelou.lou. They are yummy and packed with vitamins and nutrients, incredibly easy to make because your oven does 95% of the work!

And we definitely agree! Enjoy this flavourful baked sweet potato recipe by yourself or double the ingridients to share it with your loved ones.

Prep Time: 15 minutes Cook time: 50 minutes

Serves: 1 person



Ingridients

  • 1 sweet potato

  • 1 tbsp of olive oil

  • shredded cheese

  • olives, green onions diced

  • coriander

  • fresh yogurt

  • salt & pepper

  • chilli flakes


Directions

  1. Preheat the oven to 220 degrees.

  2. Use a fork to poke holes into the sweet potatoes, and cover them individually in foil, and line them on a baking sheet keeping folded foil side up.

  3. Roast for 40 minutes until the skin has puffed up and you can easily pierce them with a fork. Remove the foil and bake again for 10 to crisp the skin.

  4. Once they're baked you can slice them open, and mash the flesh with a fork, adding olive oil or butter, add salt and pepper, shredded cheese, fresh yogurt, olives, coriander and green onions!

  5. You can enjoy them with your favourite toppings, cherry tomatoes, other herbs, protein...Don't be shy be creative!


Tips

Be creative with your toppings!

Try adding some baked beans or Tuna and mayo on top.
