As easy to make as regular roasted brussels sprouts, it’s the addition of balsamic vinegar, honey and cranberries that really gives this dish a restaurant-quality flavour.
Sweet, tangy, caramelised, and perfectly crisp around the edges, they’re the best side dish for your Christmas cuisine!

Cook time: 50 minutes
Serves: 4 people
Ingredients:
150g brussels sprouts, trimmed & halved
2 tbsp olive oil
1 1/2 tbsp balsamic vinegar
1 1/2 tbsp honey
1 clove of garlic, minced
Salt & pepper, to taste
35g cranberries
30g almonds
Rosemary
Instructions:
Preheat the oven to 180℃.
Blanch the brussels sprouts - this will give them a lovely pop of colour and will guarantee crunchiness.
In a bowl, mix the oil, vinegar, honey, garlic and seasoning. Whisk everything together, add the brussels sprouts, then toss everything well so the veg is coated.
Place on a baking tray on the cut side - this will give the best caramelisation.
Sprinkle the cranberries, almonds and rosemary on top.
Bake for 12 to 15 minutes, until the bottom side is caramelised.
Serve hot with mashed potato or your favourite protein-filled dish.
