Beetroot carrot sliders recipe


Need a new way to get the kids excited about eating veggies? Try these beet and carrot sliders from Destination Delish.


Not only do kids love a good burger, but the pink colour from the beets make them extra special too!


The best part? They’re super tasty and easy to make, so you can even get the little ones involved in the cooking.



Make this big batch of 12 and you can easily keep some in the freezer for a quick, healthy dinner on days when you don’t have time to cook.

Serves: 12 people


Ingredients: 

3 beetroots, peeled & chopped

4 carrots, peeled & shredded

40g onion, chopped

1 clove of garlic, minced

1 tsp cumin

1/2 tbsp chilli powder

100g walnuts

90g old-fashioned oats

1/2 tsp salt

1/2 tsp pepper

2 eggs

2 tbsp olive oil

160g Greek yogurt (optional)

60g sour cream (optional)

15g fresh coriander, chopped (optional)

1/2 lime, juice only (optional)


Instructions:

  1. Put the beetroots on a large paper towel, put another paper towel on top, then press down to release any juices.

  2. Add the beets to a food processor with the carrots, onion, garlic, cumin, chilli powder, walnuts, oats, salt, pepper and eggs. 

  3. Blitz until it reaches a consistency that’s similar to ground meat.

  4. Split the mixture into twelve and form them into patties.

  5. Put a large pan over a medium-high heat and add 1 tablespoon of olive oil.

  6. Once the oil is warm, add patties to the pan and cook for 3 or 4 minutes on each side until they turn golden.

  7. Repeat until all your patties are cooked.

  8. If you want to serve with a Greek yogurt sauce, simply add the yogurt, sour cream, coriander and lime juice to a small bowl and mix well.

  9. Serve the patties hot in a burger bun with your homemade sauce.


Storage tips

Once cool, put these sliders in an airtight container and keep in the fridge for up to 2 days, or freeze for up to 2 months.
