Blueberry and banana flapjacks

Treat yourself to something sweet with this versatile recipe from Five for a Fiver.

Made with just a handful of ingredients, these flapjacks are so quick and easy to throw together.

You can even play around with the flavours by adding your favorite seeds, nuts or dried fruit. Why not switch the sweetener with Medjool dates, or use strawberries instead of blueberries?

However you decide to make them, this recipe is a must-try!

Ingredients

  • 225g porridge oats

  • 2 bananas, mashed

  • 150g blueberries

  • 40g butter

  • 5-8 tbsp liquid sweetener of your choice (e.g. honey or date nectar)


Preparation


  1. Preheat the oven to 200℃ and grease a baking tin.

  2. While the oven is heating, melt the butter in a pan.

  3. Add the liquid sweetener and stir well.

  4. Add the mashed banana and oats. Stir well.

  5. Add the blueberries and stir, being careful not to squash them.

  6. Pour the mixture into your prepared baking tin and spread it evenly with the back of a spoon.

  7. Put the tin in the oven and bake for 15 to 20 minutes, until slightly brown.

  8. Remove from the oven and let the flapjacks cool before you slice them.



Tips

To store: Once the flapjacks have fully cooled, put them in an airtight container and keep them at room temperature for up to five days.

Vegan: To make these flapjacks vegan, we recommend using nut butter instead of standard butter.
