Ingredients:
1 tsp peanut oil
3 tbsp minced shallots
2 carrots, sliced
125g green beans, cut into 1 inch pieces
70g bok choy, chopped
70ml vegetable broth
1 tbsp soy sauce
Instructions:
Put a large pan on a high heat and warm the oil.
Once the oil is warm, add the shallots and cook for 3 minutes.
Add the carrots and cook for 3 minutes.
Add the green beans and cook for 2 minutes.
Add the bok choy and cook for 2 minutes.
Add the broth, bring to a simmer, and cook for 2 minutes.
Add the soy sauce, stir well, and serve hot.
