Broccoli guacamole recipe


Inspired by @patissiereparisienne, this simple broccoli dip makes a great starter or snack.


Putting a unique twist on a classic guacamole, this recipe is quick and easy to make with just a handful of ingredients.

Ingredients: 

Broccoli, chopped into florets

Oil

Coriander

Salt, to taste

Pepper, to taste

Chilli flakes, to taste

Red onion, chopped

Lime, juice only

To serve (optional): bread, crackers, carrots, tomatoes, bell pepper, cucumber


Instructions:

  1. Fill a pan with water, add a little salt and bring it to the boil.

  2. Add the broccoli and boil for around 10 minutes until it becomes very tender.

  3. In the meantime, fill a bowl with ice water.

  4. Once the broccoli has finished cooking, strain it and put it in the ice water for a minute or two.

  5. Put the broccoli in a blender and blend until it breaks down.

  6. Add some oil, coriander, seasoning, chilli flakes, red onion and lime juice. Blend again until it reaches a creamy consistency.

  7. Taste the dip and add any extra seasoning, coriander, lime juice or chilli flakes, if needed.


Storage tips

Once ready, put this dip in an airtight container and keep it in the fridge for up to 3 days.
