It couldn’t be easier to make, and it goes perfectly with just about anything - grilled chicken, pork chops, roast beef, you name it!
This recipe is easy to adapt through the seasons too. Why not try it with turnip and swede when winter rolls around?
Overview:
Prep time: 10 minutes
Cook time: 15 minutes
Serves: 4 people
Ingredients:
450g carrots, peeled
450g butternut squash, peeled
1 tbsp butter
Salt & pepper, to taste
Instructions:
1. Cut the carrots and squash into 1 inch cubes.
2. Put them in a pan of water.
3. Bring to the boil, cook until soft, then drain the water.
(Top tip: once cool, freeze this water to use later as stock in soups or stews)
4. Add butter to the pan then use a masher to get the mixture to your desired consistency.
5. Season to your taste, then combine well or mash a little more.
6. Serve.
