Carrot, orange and avocado salad

With a wonderful combination of flavours, this side salad from BBC Good Food will become the highlight of summer mealtimes.

Not only is it fresh, light and seriously delicious, but it’s so quick and easy to make.

Whether you eat it alone or perhaps with your favourite salmon dish, it’ll bring a lovely pop of colour to the table too.

Ingredients

3 oranges

3 carrots, peeled & ends removed

2 avocados

70g rocket

1 tbsp olive oil

Preparation

  1. Prepare the oranges by removing and cutting the segments from two oranges, then zesting and juicing the final one.

  2. Prepare the carrots by cutting them in half lengthways, then slicing them into ribbons using the peeler.

  3. Next, prepare the avocados by removing the peel and stones, and then slicing.

  4. Put the orange segments into a large bowl with the carrot ribbons, rocket and avocado slices.

  5. In a separate bowl, whisk together the orange juice and zest with the olive oil.

  6. Toss this dressing through the salad, then season to your taste.
