Perfect for a busy Boxing Day, just throw everything together with some brie and cranberry sauce, and you’re good to go.

Serves: 2-4 people
Ingredients:
600g leftover Christmas roast veg (eg. potatoes, carrots, parsnips)
1 tbsp olive oil
Handful of leftover fresh herbs (eg. rosemary, thyme, sage), leaves removed
150g brie sliced
3 tbsp leftover cranberry sauce
1 tbsp pine nuts
Pesto, for serving (optional)
Instructions:
Preheat the oven to 180°C.
Put your veg on a baking tray and drizzle with oil.
Add black pepper and herbs, then roast for 15 minutes.
Add the brie amongst the veg then cook for another 5 to 8 minutes until melted.
Take your veg out of the oven, drizzle with cranberry sauce, scatter with pine nuts, and serve.
