Citrus Pomegranate Salad Recipe

Colourful, light and refreshing, this unique salad from Levi Roots makes a great starter for any meal.

By combining citrus notes from the fruits, and freshness from the chilli, mint and red onion, it’ll bring an incredible burst of flavour to the table.

Perfect for starting off a barbecue or family meal, it’s so quick and easy to put together.


Nutritional content

Servings: 8 people

Cook time: 10 minutes

Ingredients

5 tsp white vinegar

4 tsp clear honey

Salt and pepper

5 tbsp extra virgin olive oil

1 rep chilli, seeds removed and finely chopped

4 oranges. peeled and segmented

2 ruby grapefruits, peeled and segmented

1 plain grapefruit, peeled and segmented

1 rep chilli, seeds removed and finely chopped

1 plain grapefruit, peeled and segmented

1 red onion, finely sliced

Bunch of mints, torn

1 pomegranate, seeds only




Preparation

  1. To make the salad dressing, mix the vinegar and honey until well combined. Season, then gradually whisk in the oil with a fork. Next, add the chilli and whisk again. Then, simply add any more vinegar or oil to taste.

  2. Arrange the segmented fruit on a serving platter, sprinkle with onion and mint, then pour over the dressing until it coats the salad well.

  3. Just before serving, sprinkle the pomegranate seeds on top.
