Cool Oasis Gazpacho recipe

So refreshing and vibrant, this recipe brings a cool twist to traditional gazpacho. Combining fresh fruits and veggies from your HeroGo box, this dish is perfect for beating the heat of the UAE summer.

1 sweet potato, peeled and cubed

1 cauliflower, broken into small florets

2 carrots, chopped

2 celery stalks, chopped

1 onion, chopped

1 head of lettuce, chopped

1 cup cherry tomatoes, halved

2 cucumbers, chopped

1 avocado, diced

1 peach, chopped

2 pears, chopped

2 mandarins, peeled and segmented

1 mango, chopped

1 cup cherries, pitted and halved

1 dragon fruit, chopped

2 apricots, chopped

1 cup red grapes, halved

2 passion fruits, pulp scooped out

1 courgette, chopped

1 parsnip, chopped

For the Gazpacho Base:

3 cups tomato juice

1/4 cup olive oil

2 tbsp red wine vinegar

Salt and pepper to taste


  1. Prepare the Sweet Potato and Cauliflower:

  • Peel and cube the sweet potato.

  • Break the cauliflower into small florets.

  • In a large mixing bowl, combine the sweet potato and cauliflower.

  1. Chop the Vegetables:

  • Chop the carrots, celery, onion, lettuce, cucumbers, courgette, and parsnip.

  • Add them to the mixing bowl with the sweet potato and cauliflower.

  1. Prepare the Fruits:

  • Dice the avocado, peach, pears, and mango.

  • Peel and segment the mandarins.

  • Pit and halve the cherries.

  • Chop the dragon fruit and apricots.

  • Halve the red grapes.

  • Scoop out the pulp of the passion fruits.

  • Gently fold all the fruits into the mixing bowl with the vegetables.

  1. Make the Gazpacho Base:

  • In a blender, combine the tomato juice, olive oil, and red wine vinegar.

  • Blend until smooth.

  • Season with salt and pepper to taste.

  1. Combine and Chill:

  • Pour the gazpacho base over the mixed fruits and vegetables.

  • Stir well to combine.

  • Cover and refrigerate for at least 2 hours to let the flavors meld and the gazpacho to chill.

  1. Serve:

  • Serve the gazpacho cold.

  • Garnish with fresh basil leaves and croutons if desired.

Storage Tips:

We recommend enjoying this gazpacho fresh, but it can be stored in an airtight container in the fridge for up to 2 days. Stir well before serving.
