Easy carrot omelette

Healthy, high in protein and really easy to make, this tasty omelette from Sava’s Kitchen will quickly become your new favourite breakfast.


A simple dish with only a handful of ingredients, you can even adapt it by adding capsicum, tomatoes or spring onion - maybe even bacon or smoked salmon.

Ingredients

  • 1 tbsp oil

  • ⅛ onion, diced

  • 1 carrot, shredded

  • 2 eggs

  • 2 tbsp water

  • Pinch salt

  • Pinch pepper


Preparation

  1. Heat the oil in a frying pan over a medium heat.

  2. Add the onion and cook until translucent - around 4 minutes.

  3. Add the carrot and cook for another 4 or 5 minutes, stirring often, until the carrot is soft and starts browning.

  4. In the meantime, whisk the eggs in a small bowl with the water, salt and pepper.

  5. Once the carrot is cooked, add the whisked eggs and stir gently.

  6. Cover the pan, lower the heat and cook for 8 minutes, until your omelette is fully cooked.

Tips

To store: Once this omelette is fully cool, put it in an airtight container and keep in the fridge for up to three days.
