Healthy, high in protein and really easy to make, this tasty omelette from Sava’s Kitchen will quickly become your new favourite breakfast.
A simple dish with only a handful of ingredients, you can even adapt it by adding capsicum, tomatoes or spring onion - maybe even bacon or smoked salmon.

Prep time: 20 minutes
Heat the oil in a frying pan over a medium heat.
Add the onion and cook until translucent - around 4 minutes.
Add the carrot and cook for another 4 or 5 minutes, stirring often, until the carrot is soft and starts browning.
In the meantime, whisk the eggs in a small bowl with the water, salt and pepper.
Once the carrot is cooked, add the whisked eggs and stir gently.
Cover the pan, lower the heat and cook for 8 minutes, until your omelette is fully cooked.
To store: Once this omelette is fully cool, put it in an airtight container and keep in the fridge for up to three days.
