Christmas can be hectic, so if you’re on the lookout for some handy time-saving tricks, this is the recipe for you!
A super simple one from Easy Peady Foodie, it uses the traditional Christmas veg without the traditional stress that usually goes into preparing it all.
Plus, because it only uses one pan, there’s less washing up, too!
So, not only do you get to indulge in all your favourite festive foods, but you can do it while enjoying your day, rather than trying to juggle hundreds of pots and pans. Winner!

Cook time: 45 minutes
Serves: 6 people
Ingredients:
500g parsnips, peeled & cut into batons
500g carrots, peeled & cut into batons
2 tbsp olive oil
Salt & pepper, to taste
Few sprigs of fresh rosemary
250g brussels sprouts, halved lengthways
Instructions:
Preheat the oven to 200°C.
Put the parsnips and carrots in a bowl with the oil, seasoning and rosemary, then toss well so the veg is evenly coated.
Spread the veg on a baking tray and roast for 30 minutes.
Remove the tray from the oven, add the brussels sprouts, then toss everything together.
Roast for another 15 minutes.
Serve hot with your Christmas main.
