A simple salad served with a zesty dressing and pita chips, this traditional dish is full of incredible flavours, yet it’s really quick and easy to make.

You can even edit the recipe depending on the season, so you’ll have no trouble using any leftover veggies you might have in the kitchen.

Ingredients

  • 2 pita breads

  • 1 tbsp extra virgin olive oil

  • 1/4 tsp salt

  • 2 bunches romaine, chopped

  • 2 tomatoes, chopped

  • 2 cucumbers, halved & chopped

  • 1 green pepper, chopped

  • 5 radishes, sliced

  • 15g parsley, chopped

  • 5g mint, chopped

  • For the dressing

  • 60ml extra virgin olive oil

  • 1 lemon, juice only

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/2 tsp ground sumac


Preparation

  1. Preheat the oven to 190℃.

  2. Brush the pitas with oil and sprinkle with salt, then lay them on a baking tray in a single layer.

  3. Put the tray in the oven and bake the pitas for 8 to 10 minutes, turning halfway through, until they become crisp.

  4. Remove the tray from the oven and let the pitas cool.

  5. In the meantime, prepare the vegetables and put the lettuce, tomato, cucumber, pepper, radishes, parsley and mint in a large bowl. Toss everything together.

  6. Next, put the olive oil, lemon juice, salt, pepper and sumac in a small bowl. Whisk well.

  7. Drizzle the dressing over the salad then serve with the pita chips.
