Ingredients

1kg figs, quartered

1 orange, zest only

400g granulated sugar

1 lemon, juice only

Preparation

  1. Put the figs in a saucepan with 150ml of water.

  2. Turn on the heat and bring it to a simmer. Cook for 5 minutes until the fruit softens.

  3. Add the orange zest, sugar and lemon juice, and stir well.

  4. Bring the mixture to a boil and let it cook for 5 to 7 minutes. Make sure you’re stirring it often, and that you’re removing any scum that comes to the surface. Cook until the mixture becomes thick.

  5. Remove from the heat and let it cool for 10 minutes.

  6. Put the jam into two 500ml sterilised jars. Seal the jars and wait for it to fully cool.

Tips

To store: Unopened, this fig jam will last for up to 6 months in the cupboard. Once you open a jar, keep it in the fridge and use it within 2 weeks.
