It has plenty of tasty fruit packed with vitamins and minerals, and there’s even a good dose of coconut milk for some added healthy fats.
It’s perfect for those with a sweet tooth, so why not give it a go?
Servings: 6 people
Cook time: 20 minutes
● 2 bananas, sliced then frozen
● 400ml coconut milk
● 1 grapefruit, juice and zest
● 300g frozen strawberries
● 3 tbsp honey
Take the bananas, coconut milk, grapefruit juice and grapefruit zest, then put them in a blender. Blend until smooth.
Add the strawberries and honey, then blend again until smooth.
Put the mixture in a container that’s freezer-safe, and keep it in the freezer overnight.
Serve on its own, or with your favourite dessert.
Vegan: To make this dish vegan, just switch the honey for a vegan-friendly alternative.
To store: Once the ice cream is ready, keep it in an airtight container in the freezer for up to 2 months.
