Serves: Side Dish
Blanche your green beans, boiling 3 to 5 minutes in salted water
Plunge in a bowl with ice and water
In a skillet, melt the butter or olive oil to bubbling
Add sliced almonds and sauté untill golden brown
Reduce the heat to low and add chopped shallots and garlic
Sauté for an additional 1 to 2 minutes
Add blanched green beans and keep tossing in pan, until evenly combined and the green beans are tender
Add the lemon zest and lemon juice, toss once again
Season to taste with salt and pepper, sprinkle the parmesan and serve immediately!
