Date and nut butter bats

Overview:

Prep time: 15 minutes

Freeze time: 30 minutes

Serves: 12 people

Ingredients:

12 dates

150g cooking chocolate

Nut butter

24 chocolate chips or edible eyes

Instructions:

  1. Line a plate or tray with baking paper.

  2. Soak the dates in boiling water until soft.

  3. In the meantime, melt the chocolate.

  4. Drain the dates.

  5. Cut most of the way around the dates so you can remove the stone, but make sure both halves stay attached to each other. Carefully pull the sides out, like you’d open a book, so they make a bat shape.

  6. Put a glass on top of each date and press down to flatten them.

  7. Spread a layer of nut butter on each bat.

  8. Add a layer of melted chocolate on each bat.

  9. Add the chocolate chips or edible eyes, lay the bats on your prepared tray and put in the freezer for at least 30 minutes until the chocolate sets.
