1 1/2 cups graham cracker crumbs 1/3 cup granulated sugar 6 tablespoons unsalted butter, melted 14 oz can sweetened condensed milk 4 large egg yolks 1/2 cup fresh Key lime juice (or regular lime juice if Key limes are unavailable) 1 tablespoon lime zest (preferably from Key limes) 1 cup heavy whipping cream 2 tablespoons powdered sugar 1/2 teaspoon vanilla extract
Preheat your oven to 350°F (175°C).
Mix crackers, sugar, melted butter until evenly coated with butter.
Push into 9-inch pie dish for crust.
Bake in the preheated oven for 10 minutes. Remove and allow to cool slightly
In a large bowl, whisk together sweetened condensed milk and egg yolks until smooth. Add lime juice and zest, whisk until combined. The mixture will thicken slightly as you whisk.
Pour the lime filling into crust then bake for 15-18 minutes, or until the filling is just set and the center jiggles slightly when shaken. Remove and let it cool at room temperature.
Once cooled, cover and refrigerate for at least 4 hours, or preferably overnight.
When ready to eat, create whipped cream topping. Whisk the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
Spread the whipped cream over the top of the chilled pie.
Add a little lime zest to garnish. Enjoy!
To store: If you have leftover key lime pie, you can store it in an airtight container in the refrigerator for up to 3-4 days.
