Leftover turkey soup recipe


We’ve all been there - we’re cooking Christmas dinner and end up with enough to feed an entire army!


If you’re wondering what to do with all those leftovers, this recipe is for you!



A super tasty soup adapted from Liana's Kitchen, it not only uses up your leftover roast turkey, but it makes the most of any extra veggies too.


Perfect for Boxing Day lunch, it still delivers those unmistakable festive flavours while offering a healthier dish that everyone will love.


Served with a chunk of crusty bread, it’s a great way to make Christmas a less wasteful time of year.


Overview: 

Prep time: 10 minutes

Cook time: 20 minutes

Serves: 4 people


Ingredients: 

Oil

1 onion, chopped

1 clove of garlic, minced

200g cooked turkey

300g chopped vegetables, like carrots, potatoes and parsnips

2 tsp mixed herbs

1 litre chicken stock


Instructions:

  1. Heat a large pot over a medium-high heat. Add a dash of oil and sauté the onion and garlic.

  2. Add your turkey, veg, herbs and stock, then bring to the boil.

  3. Lower the heat and simmer for 20 minutes.

  4. Use a blender to get the soup to your preferred consistency.

  5. Season, stir then serve with a chunk of crusty bread.
