Freeze time: 4 hours
Serves: 4 people
Ingredients:
1 large peach
1 large mango
1 tsp lime (or lemon) juice
Instructions:
Remove the pit from the peach and cut it into slices or chunks.
Peel the mango and cut the flesh into slices or chunks.
Put the fruit in a bag or container and freeze for at least 4 hours, until solid.
Remove from the freezer and let it thaw slightly, until it can be broken up a little.
Put the frozen fruit in a food processor with the lime (or lemon) juice.
Pulse until the fruit starts to break down, then blend until it reaches a smoother consistency.
If needed, add a splash of warm water and try pressing the mixture down.
If you like your sorbet to be soft and creamy, serve it right away.
If you prefer your sorbet to be firmer, put it back in the freezer for a while.
Storage tips
Once ready, put in an airtight container and keep in the freezer for up to 4 weeks.
