This simple sorbet from Impress Not Stress is the most refreshing summer treat.

Perfect for using over-ripe fruit while helping you beat the heat, it only needs 3 ingredients and 10 minutes of preparation time.

Satisfying your sweet tooth with plenty of natural goodness, it’s the best way to reduce food waste this summer.

Prep time: 10 minutes

Freeze time: 4 hours

Serves: 4 people

1 large peach

1 large mango

1 tsp lime (or lemon) juice

  1. Remove the pit from the peach and cut it into slices or chunks.

  2. Peel the mango and cut the flesh into slices or chunks.

  3. Put the fruit in a bag or container and freeze for at least 4 hours, until solid.

  4. Remove from the freezer and let it thaw slightly, until it can be broken up a little.

  5. Put the frozen fruit in a food processor with the lime (or lemon) juice.

  6. Pulse until the fruit starts to break down, then blend until it reaches a smoother consistency.

  7. If needed, add a splash of warm water and try pressing the mixture down.

  8. If you like your sorbet to be soft and creamy, serve it right away.

  9. If you prefer your sorbet to be firmer, put it back in the freezer for a while.

Once ready, put in an airtight container and keep in the freezer for up to 4 weeks.
