Mushroom nachos recipe


Inspired by Teaspoon of Spice, these veggie nachos are perfect for parties and get-togethers.


Using mushrooms as an alternative to meat, it has all the classic flavours but it’s just a little healthier.



Just add all your favourite toppings and it’ll be a real crowd-pleaser.



Overview: 

Prep time: 10 minutes

Cook time: 25 minutes

Serves: 4 people


Ingredients: 

1 tsp oil

1 clove of garlic, minced

300g mushrooms

1 tsp cumin

1/2 tsp smoked paprika

1/4 tsp black pepper

1/8 tsp salt

120g tortilla chips

120g cheese, shredded

To serve (optional): roasted red peppers, avocado, diced tomatoes, soured cream, jalapeños


Instructions:

  1. Heat the oil in a large pan.

  2. Add the garlic and sauté for 1 minute.

  3. Add the mushrooms, cumin, paprika, pepper and salt. 

  4. Sauté for around 15 minutes until the mushrooms have cooked down.

  5. Drain the mixture through a sieve and set it aside.

  6. Arrange the tortilla chips in a baking dish or on a baking tray. 

  7. Add the mushroom mixture then sprinkle with cheese.

  8. Place under the grill until the cheese has started to melt.

  9. Add your favourite toppings then serve immediately.


Storage tips

We recommend eating these nachos straight away.
