Mushroom stuffing Recipe

This stuffing from All Recipes makes the perfect holiday's side dish.

The apple and herb flavours really work together to bring a festive feel to the table, while the mushrooms make it unmistakably delicious.

It may take a little while to cook, but it’s actually really quick to put together - it just needs a bit of time in the oven to make it extra tasty.

Incredibly delicious and moist, it’s perfect for trying something a little different this Christmas.

Cook time: 1 hour 30 minutes

Ingredients

1 1/4 lb mushrooms

4 oz butter

1 onion, diced

2 stalks celery, chopped

1 tsp of any seasoning of your choice, such as parsley, sage, rosemary or thyme, salt and pepper

2 3/4 lb dried breadcrumbs

12 fl oz chicken stock

2 eggs, beaten

4 apples, cored, peeled and sliced

Handful of parsley, chopped

Preparation

  1. Preheat the oven to 190℃, and butter a 9x13in casserole dish.

  2. Rinse and dry the mushrooms, then cut them into quarters.

  3. In a large frying pan, heat the butter. Then, add the mushrooms, onion and celery, and sauté for 5 minutes.

  4. Remove from the heat and stir in the herbs and seasoning.

  5. In a large mixing bowl, combine the breadcrumbs, stock and eggs, then add the mushrooms mixture, apples and parsley. Mix well then put it in the casserole dish.

  6. Cover the dish and bake for around 45 minutes. Then, take off the cover and bake for another 15 minutes.

Tips

To store: Once it’s fully cool, put the stuffing in an airtight container and keep it in the fridge for up to 3 days.
