Not only is it super easy to put together, but it can be made up to 3 days in advance, so you can enjoy the festivities without worrying about the cooking.

● 4 tomatoes, chopped into small chunks
● 1 onion, finely chopped
● 3 tbsp tomato ketchup
● Handful of coriander, chopped
Mix together the tomatoes, onion and ketchup along with a pinch of salt.
Keep in the fridge until you’re ready to serve.
Before serving, stir through the chopped coriander.
To store: Keep the relish in an airtight container and put it in the fridge for up to 3 days.
