This delightful dish is a true treasure trove of taste, combining the tender crunch of okra with the creamy richness of turmeric-infused curry.Trust us, it's a match made in vegetable heaven!

Prep Time: 15 minutes Cook time: 30 minutes
Serves: 4 people
Rinse the okra, trim away the stem ends, and then cut it into 1/2 to 3/4 inch pieces
Then sauté the okra in 2 tbsp of olive oil for 5 to 7 minutes over medium-high heat
The brief high heat cooking will give a bit of a crisp good and control the slime
Remove it to a plate and keep it aside
In a blender puree the onions, tomatoes along with ginger, garlic and green chili and coriander
In the pan you used to for the okra, add 1 tbsp of olive oil and sauté the shredded turmeric, cinamon and the cumin
Then add the purree, salt and pepper and let it simmer while stirring until it's thick
Add the okra, and let it cook until it's tender. Now scramble the yogurt to make it smooth and add it gradually while stirring for 2 minutes until nicely combined.
Your curry is ready, add fresh coriander leaves and drizzle some lemon juice and enjoy it with rice or your favorite flat bread!
