Orange banana bread

We all deserve a sweet treat every now and again, which is why you should try this incredible orange banana bread from Best of Vegan.


Using just a handful of ingredients, this vegan recipe combines wonderful, fresh flavours to create a unique cake with an irresistible sticky glaze.


To add the perfect finishing touch, just decorate it with orange slices and granola or seeds.

Ingredients

  • 3 ripe bananas (approx. 300g)

  • 75g olive oil

  • 100g coconut or brown sugar

  • 3 oranges, zest only

  • 225g self-raising flour

  • 2 tsp baking powder

  • 100g icing sugar

  • 2 tsp water


Preparation

  1. Preheat the oven to 180℃ and line a loaf tin with baking paper.

  2. Put the bananas in a large mixing bowl and mash them with a fork.

  3. Add the oil, sugar and zest of 2 oranges. Stir well.

  4. Sieve the flour and baking powder and fold into your banana mixture.

  5. Pour the mixture into your lined loaf tin.

  6. Bake for 35 to 40 minutes. If it starts to get dark on top, cover the tin with some foil. Use a toothpick or skewer to test that your loaf is ready - when it comes out clean, it’s time to take the loaf out of the oven.

  7. Leave the loaf inside the tin to cool for 10 minutes, then transfer to a wire rack to finish cooling.

  8. To make the glaze, put the zest of the last orange into a bowl with the icing sugar and water, and mix well.

  9. Once the loaf has fully cooled, pour the glaze on top.


Tips

To store: Once this loaf has fully cooled, put it in an airtight container and keep at room temperature for up to 3 days.
