Parsnip and Carrot Purée Recipe

Ingredients

  • 8 Parsnips, peeled and sliced

  • 2 carrots, peeled and sliced

  • 1/4 cup snipped chives

  • 6 tbsp butter

  • Salt and Pepper

Preparation



  1. In a large pot, cover the carrots and parsnips with lightly salted water, then bring to a boil over high heat.

  2. Reduce the heat to medium-low, cover and simmer for around 15 to 20 minutes, until the veg becomes tender.

  3. Drain, then put the veg back in the pot.

  4. Turn the heat to low, stir in the chives and add 3 tablespoons of butter.

  5. Use a blender to begin puréeing the mixture. Add another 3 tablespoons of butter then continue to blend until smooth.

  6. Season to taste, then serve alongside your favourite roast meat.




Tips


To store: Once it has fully cooled, put in an airtight container and keep it in the fridge for up to 3 days.
