Passion fruit salad dressing recipe

Nothing beats a fresh salad, except one with this incredible dressing from The Spruce Eats.


Just the thing for when the weather’s heating up, it’s so tasty and refreshing with all its tropical flavours.

Ingredients

2 passion fruits

120ml olive oil

1 tbsp lime juice

1 tbsp vinegar

2 tbsp honey

1/4 tsp salt

Preparation

  1. Remove the pulp and seeds from the passion fruits and scrape into a saucepan.

  2. Heat over a medium-low heat until almost boiling, stirring often.

  3. Take the pan off the heat, then strain the pulp through a sieve to remove any seeds.

  4. Let the juice cool.

  5. Once cool, put the juice in a blender with the olive oil, lime juice, vinegar, honey and salt. Blend until smooth.



Tips

To store: Once this salad dressing is ready, put it in an airtight container and keep it in the fridge for up to one week.
