Pasta with broccoli, spinach and peas recipe


So quick and simple, this recipe from Woolworths makes the perfect midweek meal.


With lots of flavour and plenty of hearty pasta, it’ll always go down well at the dinner table.


You could even add your favourite protein to put your own twist on this delish dish!




Overview: 

Prep time: 10 minutes

Cook time: 20 minutes

Serves: 4 people


Ingredients: 

4 tbsp olive oil

1 onion, thinly sliced

2 cloves of garlic, thinly sliced

350g spaghetti

1 litre vegetable stock

400g chopped tomatoes

140g broccoli florets

1 carrot, peeled, halved & thinly sliced

1 tsp salt

140g spinach

70g peas

2 tsp black pepper


Instructions:

  1. Heat the oil in a large pan over a medium-high heat.

  2. Add the sliced onion and sauté for around 2 minutes.

  3. Add the garlic, spaghetti, stock, chopped tomatoes, broccoli, carrot and salt.

  4. Bring to a boil then reduce the heat. Cover with a lid and cook for 3 minutes.

  5. Remove the lid and stir.

  6. Keep it simmering and stir constantly for around 8 minutes until the pasta is cooked and the stock has been absorbed.

  7. Add the spinach, peas and pepper. 

  8. Toss everything for around 1 minute, until well combined. Serve hot.
