Pomegranate and Mandarine Salad Recipe

We can’t get enough of this colourful, fruity salad from food.com - not only does it look great, but it tastes amazing too.

The tart pomegranate seeds work so well with the sweetness from the mandarins, creating a fresh, light dish that’s full of flavour.

It’s so quick and easy to make as well, it’s the perfect healthy, midweek meal.

It’s bound to become a family favourite in no time.

Ingredients

100g Salad Leaves

1 Spring Onion

2 ribs of celery

80g Pomegranate seeds

100g mandarin slices, chopped

120ml oil and vinegar salad dressing

60ml balsamic vinegar

Preparation


  1. Put the salad leaves in a big mixing bowl - add more if needed.

  2. Throw in the spring onion and celery, then mix everything together.

  3. Add the pomegranate seeds and chopped mandarin slices, then mix again.

  4. Pour in the oil-and-vinegar salad dressing and combine all the ingredients thoroughly.

  5. Drizzle with balsamic vinegar, toss, then serve.


Tips

To store: Once the salad is ready, we recommend eating it straight away, but you can put it in an airtight container and keep it in the fridge for a day or two.
