Preparation
Put the salad leaves in a big mixing bowl - add more if needed.
Throw in the spring onion and celery, then mix everything together.
Add the pomegranate seeds and chopped mandarin slices, then mix again.
Pour in the oil-and-vinegar salad dressing and combine all the ingredients thoroughly.
Drizzle with balsamic vinegar, toss, then serve.
Tips
To store: Once the salad is ready, we recommend eating it straight away, but you can put it in an airtight container and keep it in the fridge for a day or two.
