Ingredients:

  • 3 medium parsnips, peeled and chopped into 1-inch pieces

  • 1 small butternut squash, peeled, seeded, and cubed

  • 1 head of radicchio, cut into wedges

  • 3 tablespoons olive oil

  • Salt and pepper, to taste

  • Optional: balsamic vinegar or glaze for drizzling

  • Optional: fresh or dried herbs of your choice (such as rosemary, thyme, or oregano)



Preparation

  1. Preheat your oven to 425°F (220°C).

  2. Prep you veg - Parsnips: Wash, peel, and chop the parsnips into quarters, Butternut squash: Wash, cut it in half, remove seeds, and peel. Then, chop it into small cubes. Radicchio: Cut the head into wedges, keeping the core intact to hold the wedges together

  3. Add any other veg at the point or meat.

  4. Place into baking dish or tray lined with parchment paper

  5. Drizzle with olive oil, season with salt and pepper, and toss well to ensure even coating.

  6. Roast in the preheated oven for 20-25 minutes, or until they are tender and slightly browned.

  7. Add a drizzle of balsamic vinegar or glaze for added flavor.

  8. Remove the tray from the oven..
