Preheat your oven to 425°F (220°C).
Prep you veg - Parsnips: Wash, peel, and chop the parsnips into quarters, Butternut squash: Wash, cut it in half, remove seeds, and peel. Then, chop it into small cubes. Radicchio: Cut the head into wedges, keeping the core intact to hold the wedges together
