Red cabbage casserole recipe


A gorgeous recipe from food waste hero @lelou.lou, this savoury red cabbage casserole makes the most cosy treat.


Combining an irresistible golden topping with a creamy cabbage centre, you'll love the fresh herbs in this quiche-like dish.



But, the best part? The cheese pull when it’s fresh out of the oven! 



Ingredients: 

1/2 red cabbage, finely sliced

4 large eggs

60ml yogurt or sour cream 

90g flour

3 tbsp olive oil 

1/2 tsp baking powder

1 bunch coriander 

1 onion, finely chopped

1 clove of garlic 

115g mozzarella (shredded)

Salt & pepper



Instructions:

  1. Put the cabbage in a colander, add salt and leave for 20 minutes.

  2. In the meantime, preheat the oven to 180℃.

  3. After 20 minutes, scrunch the cabbage with your hands to get rid of the moisture.

  4. Rinse the cabbage and drain the water.

  5. In a small bowl, whisk the eggs.

  6. Add the yogurt, oil and some pepper, and mix well.

  7. Add the flour and baking powder and stir well.

  8. Add the cabbage, onion, coriander and garlic. Mix well.

  9. Brush a baking dish with oil, then pour in your cabbage-egg mixture. Sprinkle with mozzarella.

  10. Bake for 15 to 20 minutes, until the cheese is nice and golden.

  11. Serve warm or cold. Enjoy!
