Roast veg with quinoa recipe


Full of flavour and nutrients, this vegan-friendly dish is packed with wholesome ingredients.


A great way to use all the fresh, healthy veg in your HeroGo box, it’s really easy to prepare, and you can even make it in advance for some simple meal prep.



The perfect plant-based lunch or side dish, you can even get creative by adding your favourite herbs and veggies. Enjoy!

Prep time: 15 minutes

Cook time: 50 minutes

Serves: 4 people


Ingredients: 

185g quinoa, rinsed

475ml water

1 tbsp olive oil

150g mushrooms, sliced

1 aubergine, diced

200g shallots, peeled & halved

200g tomatoes, diced

300g potatoes, peeled & diced

150g onion, sliced

200g butternut squash, peeled & diced

150g green beans, trimmed

1 tsp dried thyme

1 tsp dried rosemary

Salt & pepper, to taste


Instructions:

  1. Preheat the oven to 200°C.

  2. Put the quinoa and water in a medium saucepan and bring to the boil.

  3. Reduce the heat, cover and simmer for 15 to 20 minutes, or until the quinoa is cooked and water is fully absorbed. 

  4. Fluff with a fork and set aside.

  5. In the meantime, put the veg in a large mixing bowl, drizzle with oil then add the herbs and seasoning. Toss until the veg is coated.

  6. Line a baking tray with baking paper and spread the veg in a single layer.

  7. Roast in the oven for 30 to 35 minutes, turning halfway through, until the veg is tender and turning golden.

  8. Fluff the quinoa with a fork and serve on a plate. Top with the roasted veg and serve hot.
