Roast veggie flatbread pizza recipe

A great way to use up the veg in your EroeGo box, it puts a fresh, healthy spin on this classic cheat meal.

Seriously tasty and really easy to make, it’ll quickly become one of your go-to recipes.

1 whole wheat flatbread



4 tbsp pesto

225g mozzarella, torn

4 tbsp grated parmesan

Veggies - we recommend using...

  • 200g tomatoes, halved 40g red onion, sliced 40g mushrooms, sliced 60g zucchini, sliced 45g bell pepper, sliced


  1. Preheat the oven to 200℃.

  2. Put the vegetables on a large baking tray with some oil and seasoning. Mix thoroughly so the veg is covered.

  3. Roast for around 12 minutes until the veggies are tender, then take the tray out of the oven.

  4. Put the flatbread on another baking tray. Spread the pesto on top, add the roasted vegetables, and then sprinkle with mozzarella and Parmesan.

  5. Bake for another 10 minutes until the cheese has melted, then serve hot.


To store: We recommend eating this pizza straightaway.

Vegan: To make this dish vegan, we recommend using vegan-friendly pesto and cheese.
