Roasted Swiss Chard with Feta Recipe

The perfect new dish for those who love their veggies!

This roasted chard from All Recipes is so full of flavour, it’s great for lunch or as a side with chicken or salmon.

Not only that, but it’s incredibly quick and easy to make - just toss the ingredients together and throw them in the oven. Simple!

Ingredients

1 bunch of Swiss Chard leaves and stems separated and chopped

1 Onion, chopped

3 tbsp olive oil

Salt and Pepper

4oz Feta cheese, broken into 1/2 inch pieces

Preparation

  1. Preheat the oven to 350℉ (175℃), then grease a baking tray with oil.

  2. Put the onion and chard stems in a bowl with seasoning and 1 tablespoon of olive oil. Toss everything well, then lay the vegetables on your baking tray.

  3. Bake for around 15 minutes, until the chard stems have softened and the onion starts to brown in the corners.

  4. In the meantime, toss the chard leaves with seasoning and 2 tablespoons of olive oil.

  5. Once the onion and chard stems are cooked, sprinkle the chard leaves on top, then sprinkle the feta cheese on top of that.

  6. Put the tray back in the oven for another 20 minutes, until the stems are tender, the leaves are beginning to crisp, and the feta is golden.

  7. Serve while hot.


Tips

To store: Once it has fully cooled, put in an airtight container and keep it in the fridge for up to 3 days.
