Servings: 1-2 people
Cook time: 25 minutes
● Florets from one hand of cauliflower
● Unsalted butter
● Extra virgin olive oil
● 1 quarter cup of water
Bring 1 quarter of water to a rolling boil in the pot. Then add 2 teaspoons salt and then add cauliflower florets, for about 10 minutes. You want them submerged so they can cook properly
Pour the cooked cauliflower into a blender, then add enough water to make it smooth like soup. Blend until desired consistency has been reached - we want it soup-like but not too thick! Add more liquid if needed.
It's time to add some flavour! Add salt and butter: or each blender batch, add 1/2 teaspoon of salt per cup (or as desired) into your blending liquid. - just be mindful not to overdo it because this will affect the consistency somewhat if used excessively.
It's time to serve! Put a layer of olive oil on top and sprinkle it with chopped chives.
To store: Keep any leftovers covered and store it in the fridge for up to 3 days.
