Spanish-inspired stir fry recipe

​Ingredients

  • 80ml olive oil

  • 1 clove of garlic, minced

  • 2 potatoes, peeled & cubed

  • 1 onion, chopped

  • 1 red bell pepper, seeded & chopped

  • 1 green bell pepper, seeded & chopped

  • 1 aubergine, cubed

  • 1 zucchini, cubed

  • 4 large tomatoes, chopped

  • 1/2tsp paprika

  • 1/2 tsp cumin

  • Seasoning

  • 60ml water


Preparation

  1. Put the oil and garlic in a large pan over a medium heat.

  2. Add the potatoes and cook for 8 to 10 minutes until lightly browned.

  3. Add the onion and bell pepper and cook for another 8 to 10 minutes until the onion is lightly browned.

  4. Add the aubergine and zucchini and cook for another 5 minutes.

  5. Add the tomatoes, spices, seasoning and water and cook for another 10 to 15 minutes, until all the veggies are tender.

  6. Serve hot.


Tips

To store: Once fully cool, put this stir fry in an airtight container and keep it in the fridge for up to 2 days.
