Preparation
Put the oil and garlic in a large pan over a medium heat.
Add the potatoes and cook for 8 to 10 minutes until lightly browned.
Add the onion and bell pepper and cook for another 8 to 10 minutes until the onion is lightly browned.
Add the aubergine and zucchini and cook for another 5 minutes.
Add the tomatoes, spices, seasoning and water and cook for another 10 to 15 minutes, until all the veggies are tender.
Serve hot.

To store: Once fully cool, put this stir fry in an airtight container and keep it in the fridge for up to 2 days.
