Prep time: 20 minutes
Put a wok on a low heat and add the leeks.
Cook for a minute, then add the onion, turmeric, chilli powder, curry leaves and salt.
Mix well and cook for a few minutes until any water released by the leeks has evaporated.
Add the oil to the mixture then stir everything well.
Cook for about 3 minutes, stirring often.
To store: Once cool, put this stir fry in an airtight container and keep in the fridge for up to 3 days.
