Stuffed marrow recipe


A great dish for the whole family, this recipe from Searching for Spice is a super tasty way to use the marrow in your HeroGo box.


Don’t be put off by the cooking time - the oven does the majority of the work here, so all you have to do is throw together a simple veggie chilli to add to your baked marrows.



A fun way to get the kids eating their veggies, it’s a delicious, easy dish to add to your weekly meal rotation.



Overview: 

Prep time: 15 minutes

Cook time: 1 hour 20 minutes

Serves: 6 people


Ingredients: 

1 marrow

2 tbsp olive oil

1 red onion, finely diced

2 green chillies, sliced

2 cloves of garlic, minced

2 bell peppers, sliced

100g aubergine, diced

400g kidney beans, drained & rinsed

400g tinned chopped tomatoes

Black pepper, to taste

80g cheese, grated


Instructions:

  1. Preheat the oven to 180℃.

  2. Cut the marrow in half and scrape out the seeds.

  3. Put on a baking tray, drizzle with oil, and season.

  4. Bake for one hour.

  5. Add a little oil to a saucepan.

  6. Cook the onion, chillies and garlic until softened.

  7. Add the bell pepper, aubergine, kidney beans and tinned tomatoes.

  8. Simmer for 15 minutes.

  9. Add this chilli mix to your marrow. Bake for another 20 minutes.

  10. Sprinkle with cheese, put back in the oven until it melts, then serve hot.


Storage tips

Once your stuffed marrows have cooled, put them in an airtight container and keep in the fridge for up to 2 days, or keep in the freezer for up to 3 months. When you’re ready to eat them, just defrost overnight then bake in the oven for 20 minutes before serving.
