Preparation
Heat the oil in a large pan, then fry the chilli and garlic for 1 minute.
Add the vegetables and coat them in the oil mixture. Fry for around 3 minutes.
Add the soy sauce and sweet chilli sauce, and mix everything together. Then cook everything for another 3 minutes, or until the vegetables are tender. Serve while hot.
Tips
To store: Once the vegetables are fully cool, put them in an airtight container and keep them in the fridge for up to 3 days.
Leftover tips: Try adding noodles - or grilled fish or chicken - to create a delicious main course. .
