Sweetcorn salad recipe


This recipe from Doofood is simple, speedy and super delicious.


Pairing a no-nonsense dressing with plenty of fresh veg, you’ll have a tasty (and healthy) bowl of goodness in no time at all.


Enjoy this dish on its own for lunch, or serve it with grilled chicken for a filling main.




Overview: 

Prep time: 15 minutes

Cook time: 5 minutes

Serves: 2 people


Ingredients: 

50g corn

1 red onion, chopped

1 bell pepper, chopped

1 tomato, chopped

1 cucumber, chopped

1 carrot, peeled & chopped

Handful of coriander, chopped

1 lemon, juice only

Glug of olive oil

Glug of apple cider vinegar

Salt & pepper, to taste


Instructions:

  1. Heat a pot of salted water, add the corn, cover and boil for 3 to 4 minutes until tender.

  2. Drain the corn and let it cool.

  3. In the meantime, put the onion, bell pepper, tomatoes, carrot, cucumber and coriander in a large bowl.

  4. Add the corn to the bowl once it’s cool.

  5. Add the lemon juice, oil, apple cider vinegar and seasoning. Mix until well combined.

  6. Serve.
