Simple, speedy and super delicious, it transforms a handful of ingredients into the tastiest dish in only 40 minutes.
Great for lunch or dinner, you can even serve it with your favourite protein to make it more substantial.

Serves: 6 people
Ingredients:
2 tbsp olive oil
350g butternut squash, cubed
3-4 tomatoes, cut into large pieces
1/2 onion, sliced
2 cloves of garlic, skin on
1 tsp salt
450g pasta
Pinch of chilli flakes
1 tsp oregano
Pepper, to taste
Instructions:
Preheat the oven to 175℃ and line a baking tray with baking paper.
Prepare the veg then put it on the baking tray.
Drizzle with 1 tablespoon of oil, sprinkle with salt, and mix well so everything is coated.
Put the veg in a single layer, hiding the garlic underneath your tomatoes so it doesn’t burn.
Put in the oven for 20 to 25 minutes until all your veg is cooked.
In the meantime, cook the pasta following the packet’s instructions.
Once the veg is cooked, take the peel off the garlic and put everything in a blender with 250ml of pasta water.
Blend until it reaches your desired consistency.
Add 1 tablespoon of oil to a large pan and heat.
Add the oregano and chilli flakes and cook for a minute.
Add your sauce to the pan and mix everything well. Taste and adjust the seasoning, if needed.
Add the cooked pasta, stir well, and serve.
Storage tips
The cooked veggies can be stored for later after they’ve been cooked. Once cool, put them in an airtight container and keep in the fridge for up to 4 days.
