Turnip top pasta recipe

Serves: 4 people


Ingredients: 

Oil

50g breadcrumbs

250g pasta

500g turnip greens, washed & dried

4 cloves of garlic, peeled & sliced

1/2 chilli, chopped

Salt & pepper, to taste


Instructions:

  1. Heat a little oil in a pan and fry the breadcrumbs until golden brown. Set aside.

  2. Cook the pasta following the packet’s instructions.

  3. Prepare your turnip greens by removing the hard pieces and slicing the leftover bits. Save the hard pieces to make homemade stock (click here to find out how - just remember to only add the hard turnip stalks for a couple of minutes at the end so the stock doesn’t taste too bitter).

  4. Heat 2 tablespoons of oil in the large pan over a low heat.

  5. Add the garlic and cook until lightly browned.

  6. Add the chilli and cook for a few more minutes.

  7. Add the turnip greens. 

  8. Once they’ve wilted, add the cooked pasta and seasoning, then mix everything well.

  9. Serve in bowls topped with the breadcrumbs.
