Vanilla cheesecake

There’s no better way to get on mum’s good side than with a mouth-watering, homemade dessert. Cue this yummy vanilla cheesecake, adapted from Jane’s Patisserie.


A recipe that the kids will love helping out with, it’s simple to make, but can easily be jazzed up with tasty extras and fun decorations.



Preparation

  1. Blitz or mash 300g Digestive biscuits into fine crumbs. Melt 150g unsalted butter, add to the biscuit crumbs and mix well.

  2. Put this mixture into a deep springform tin and press down with the back of a spoon. Put in the fridge while you make the topping.

  3. Whisk together 750g cream cheese, 100g icing sugar and 2 teaspoons vanilla extract until smooth and well combined.

  4. Add 300ml double cream and continue whisking until it becomes thick.

  5. Put this mixture on top of your biscuit base and put in the fridge for at least 5 hours.


Once your cheesecake has set, then the fun can begin! Let the kids get creative by decorating it with sauce, sprinkles or chocolates, or keep it simple with whipped cream and fresh berries from your HeroGo box.


However you decorate yours, it’s a treat that mum is sure to love.
