They’re messy, they’re fun, and they’re super tasty - that’s why fajitas are the perfect family meal.
Plus, they’re incredibly easy to make which means less time in the kitchen and more time spoiling mum!
You can’t go wrong with this classic recipe from A Simple Palate and guacamole from BBC Good Food, but don’t be afraid to let the kids experiment with the veggies and spices.
Preparation
Make fajita seasoning by combining 2 teaspoons chilli powder, 1 teaspoon paprika, ½ teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, 1/2 teaspoon black pepper and a pinch of cayenne.
Coat peppers and onion with a little oil and the seasoning, lay them on a tray and bake for 20 minutes at 200°C, flipping the veggies halfway through.
Put a tin of black beans in a pan with the juices, 1/2 teaspoon garlic powder and a little salt. Simmer for 10 minutes until the beans have thickened and the liquid reduces.
For the guacamole, mash avocado in a bowl then stir in some lime juice, seasoning and coriander. Add finely chopped tomato and onion (and fresh chilli, if you like).
Dish up the roast veg, black beans and guacamole seperately, and let everyone have fun assembling their fajitas their way.
Of course you’ll need warm tortillas for serving, but you can even add salsa and cheese to really liven things up a bit.
