Dry ingredients:

  • 1 1⁄2 Cups whole Oats blended into a flour 3⁄4 Cup coconut sugar

  • 1⁄2 Cup cacao powder

  • 1 tsp baking powder

  • 1⁄4 tsp baking soda

  • 1/3 tsp pink salt

  • Handful of Dairy Free Chocolate Chips – For topping (Optional)


Wet ingredients:

  • 2 cups shredded zucchini tightly packed – About

  • 1 Medium Sized Zucchini (Extract water from Zucchini)

  • 1⁄2 Cup coconut oil

  • 2 Tsp Pure vanilla extract



Preparation

  1. Preheat oven to 175c and prepare a 9 x 9inch square baking pan with cooking spray and line with parchment paper. (Allow parchment paper to go up the sides for easy removal.)

  2. Using a muslin cloth or nut milk bag – Add shredded zucchini 1 cup at a time and squeeze out the excess water. Then set aside in a bowl.

  3. Add oats to a food processor and blend until flour like consistency.

  4. Add all the dry ingredients to oat flour and pulse until combined.

  5. Take out the blade and pour dry mixture into a bowl.

  6. Fold in wet ingredients by hand. First add the zucchini, then the oil and finally the vanilla extract.

  7. Allow batter to rest for 5 minutes.

  8. Spread brownie mixture into the pan add a few chocolate chips (optional) and bake for 30-35 minutes.

  9. Brownies are ready when an inserted toothpick is removed without wet batter.

  10. Brownies will have a dense gooey like consistency. Yummy!




Tips

To store:

Store the pie in the refrigerator to maintain its freshness. It can last for up to 3-4 days when refrigerated properly. OR


Wrap it tightly with plastic wrap and then place it in a freezer-safe bag or container. It can be stored in the freezer for up to 2-3 months
