This recipe from OlverIndulgence puts a healthy twist on the kids’ favourite snacks.
Really simple to make with only a handful of ingredients, they're perfect for after school or during the holidays.
Best of all, these beet & broccoli tots will have the kids eating all their veggies!
Overview:
Prep time: 15 minutes
Cook time: 1 hour
Serves: 3 people
Ingredients:
2 medium beetroots
1 head of broccoli, cut into florets
30g all purpose flour
Salt, to taste
Oil
Instructions:
Boil the beetroots until soft - this should take between 45 and 60 minutes.
Remove from the water and leave to cool
Peel with your thumbs, then cut into cubes.
Put the broccoli florets in a food processor and pulse until finely chopped.
Add the beetroot cubes to the food processor and pulse until well combined with the broccoli.
Put the beet-broccoli mixture in a large bowl, then add the flour and salt. Stir well.
Take a tablespoon of the mixture and roll in your hands until it forms a tater tot shape.
Continue until you’ve used all the mixture.
Heat some oil in a large pan, then fry your tots for a few minutes on each side.
Continue in batches until all your tots are cooked, then serve hot.
Storage tips
When these tots are fully cool, put them in an airtight container and store in the fridge for up to 2 days. To keep them for longer, put them in the freezer for up to 3 months.
