Broccoli sweetcorn starter recipe


This broccoli and sweetcorn starter from AnitaDaDhaba is so quick and easy to make. 


Full of fresh veg with the perfect selection of herbs and spices, it has a kick of chilli that makes it such an exciting dish.



You can even enjoy it as a lunch or side with your favourite protein, and the gorgeous flavours will make it a real favourite at the dinner table.

Serves: 4 people


Ingredients: 

Oil

1 tbsp garlic, minced

1 broccoli, cut into florets & blanched

Corn from 1 cob, boiled

Salt, to taste

1/4 tsp black pepper

Oregano, to taste

Chilli flakes, to taste

1 red onion, chopped

1 green chilli, deseeded & chopped

Handful of cherry tomatoes, chopped

1 green bell pepper, chopped

2 tbsp soy sauce

1/2 lemon, juice only



Instructions:

  1. Heat some oil in a large pan.

  2. Add the garlic and cook until fragrant.

  3. Add the broccoli and corn then mix well.

  4. Add salt, pepper, oregano and chilli flakes then mix well.

  5. Turn the heat to low, cover the pan and leave to cook for 6 minutes.

  6. Remove the lid and stir well.

  7. Add the onion, chilli, tomatoes and bell pepper. Turn the heat to high then mix well.

  8. Add the soy sauce and mix well.

  9. Add the lemon juice and mix well.



Storage tips

Once cool, put this starter in an airtight container and keep in the fridge for up to 3 days.
